I love cooking whole chickens on Sunday with a ton of mixed vegetables on the side. Why because it is something that I can use for meal prep later in the week for either work or use the leftovers for another dish (like for my homemade chicken noodle soup linked here!)

It can be scary cooking a whole chicken. It took a lot of trial and error, but I finally found a recipe that is delicious, full of flavor and so dang juicy!

Ingredients

This is a Wholesome and easy recipe that has so many ingredients that will benefit the body. The best part about it is that it is all so flavorful that my kids don’t even notice that they are eating a nutrient dense meal. it is my goal to fuel our bodies with ingredients that will benefit our bodies and not hurt the body.

Instructions

Cozy Fall Chicken Dinner

Turn the oven on 425 degrees Fahrenheit and place the oven rack on the lowest rack.

Take out the giblets and pat the chicken dry with a paper towel.

Drizzle the olive oil on top of the chicken and add the Italian seasoning, salt and pepper.

Roast the chicken for about 70-90 minutes. The internal temperature for the chicken should be 165 degrees. Use a meat thermometer to check the internal temperature. Let cool off for a couple minutes. Serve and enjoy!

Hint:

  • If you don’t have Italian seasoning, just sprinkle of mix of individual spices such as dried basil, oregano, thyme, and rosemary.
  • Also, season the inside of the chicken with the seasoning. It adds extra flavor!
  • If you have extra juices from the chicken, make a gravy with it!

Substitutions

If you are not a fan of Italian seasoning you can also do a chicken rub that calls for the following ingredients:

Crockpot Recipe

We all know I am a BIG fan of crockpot meals. If I can find a way to make this in the crockpot you know I will!

  • Pat the chicken dry witha paper towel.
  • Season the chicken with your choice of seasonings
  • add 1 cup of chicken broth/ water to the bottom of the crockpot
  • Place the seasoned chicken on top and leave in the crockpot on high for 4-5 hours or on low for 8-9 hours. (Make sure the internal chicken temp is 165 degrees!
  • Remove the chicken carefully and let it rest, tented with foil. Let the chicken rest for about 10 minutes. The serve and enjoy!

Keep the chicken stored in an airtight container in the refrigerator up to 5 days.
