Fall season is approaching and with fall season that means soup season! As much as I love fall season, for most of us that means our littles getting sick. I was determined to find a soup with immune boosting ingredients to keep us all healthy (as much as possible). With having a little one that is very sensitive to illnesses this year I made it my goal to find ways on how to keep our immune system healthy to keep us out of the hospital!

To keep it simple in order to keep our immune system healthy you have to keep your gut healthy. To keep your gut healthy, you have to eat wholesome foods that fuel your body properly.

There are foods that are great at keeping the gut healthy and the immune system up. So, I decided to mash them all together in a crockpot into a delicious soup!

Since it is fall season, this soup with a side of my pumpkin pie bar would definitely be the BESTEST fall meal ever!

Ingredients

This is a Wholesome, easy, and veggie packed recipe that has so many ingredients that will boost the immune system. When I create a recipe, it is always my goal to get as many immune boosting ingredients as possible into this recipe so then it can zap any sickness coming our way!

  • 3 tablespoon olive oil
  • 1.5 LB of Sausage (I used turkey sausage)
  • 1 cup yellow onion diced.
  • 1 cup carrot sliced.
  • 1 cup celery sliced.
  • 1/2 cup mushrooms chopped.
  • 1-3 teaspoons smoked paprika.
  • 3 tablespoons minced garlic
  • 2  Yukon gold or red potatoes diced.
  • 2 cups kale stems removed
  • 7 cups. chicken broth
  • Salt and pepper to taste
  • Fresh parsley for garnish

Brown the sausage.

Chop your vegetables into small pieces.

Add all the ingredients into the crockpot and cook on low for 8 hours or high for 4 hours.

Hint: Top this with a little bit of sour cream would really make this dish delicious!

Variations

  • Don’t love sausage? Try chicken or ground beef instead!
  • If you want this soup to be a little creamier, add ½ cup of your favorite milk to the soup and stir so that everything is mixed together.

Storage

I like to store the soup in large glass bowls in the refrigerator for about 5-7 days.

If I am freezing it, I will place the soup in large glass bowls and store in the freezer up to 6 months!

Top tip

Double or triple this batch and store in the freezer. Pull out the meal when you are in a pinch for dinner and throw it in a large soup pot. It can be ready to serve in a matter for 30 minutes or less!

YES! I always double or triple this batch that way I can store it in the freezer. It is so easy to pull out and put on the stove top when I am in a pinch for dinner!

What is best served with this soup?

I like to serve this soup with sourdough bread and a salad. You could also do green beans or any type of your favorite vegetables on the side.

Ingredients
  

  • 3 Tablespoon Olive oil
  • 1.5 LB Sausage
  • 1 Cup Yellow onion- sliced
  • 1 Cup Carrots- sliced
  • 1 Cup Celery-sliced
  • 1-3 Teaspoon smoked paprika (depending on how spicy you want it.)
  • 3 Tablespoons Minced garlic
  • 2 Yellow potatoes-large
  • 2 Cups Kale-chopped
  • 7 Cups Broth
  • 1/2 Cup Mushrooms-chopped
  • Salt and Pepper to taste
  • Fresh parsley for garnish

Instructions
 

  • Brown the sausage on a stove top skillet.
  • Chop the vegetables.
  • Add the brown sausage and the rest of the ingredients into a crockpot..
  • Cook on high for 4 hours or cook on low for 8 hours.
  • Garnish the soup with fresh parsley or sour cream serve and enjoy!
