Healthy Crockpot Sausage Potato Soup

- 3 Tablespoon Olive oil
- 1.5 LB Sausage
- 1 Cup Yellow onion- sliced
- 1 Cup Carrots- sliced
- 1 Cup Celery-sliced
- 1-3 Teaspoon smoked paprika (depending on how spicy you want it.)
- 3 Tablespoons Minced garlic
- 2 Yellow potatoes-large
- 2 Cups Kale-chopped
- 7 Cups Broth
- 1/2 Cup Mushrooms-chopped
- Salt and Pepper to taste
- Fresh parsley for garnish
Brown the sausage on a stove top skillet.
Chop the vegetables.
Add the brown sausage and the rest of the ingredients into a crockpot..
Cook on high for 4 hours or cook on low for 8 hours.
Garnish the soup with fresh parsley or sour cream serve and enjoy!
