Healthy Ground Beef and Potato Casserole

This easy and healthy ground beef and potato casserole is the perfect weeknight dinner that you won’t want to miss out on. It is packed full vegetables and whole ingredients that will make you want to cook this once a week. Not only is it delicious and full of flavor but it is also super quick and easy.

Another casserole that I threw together and prayed that it would taste delicious…and it worked! I am going to be honest, if you are just starting out with cooking, casseroles are the way to go. You can never mess them up. It’s just a whole bunch of yummy ingredients mixed together.

A couple Sunday’s ago I was meal prepping for the week. I realized my pantry and refrigerator was really low on ingredients, but I wasn’t in the mood to go grocery shopping and I am trying to only grocery shop every 2 weeks.

Ingredients

These are all simple ingredients that most people have in their house. I like to keep ingredients pretty simple for 1. then I know my kids will eat it and 2. It is quicker for me to make!

  • 1.5 LB of Ground Beef
  • 6 Medium Potatoes
  • Butter
  • Corn
  • Salt
  • Pepper
  • Garlic Powder
  • Onion Powder
  • Cheddar Cheese
  • Heavy Whipping Cream
  • Carrots

Instructions

This preparation takes about 15-20 minutes to do. It is super simple and quick. It is the perfect meal to meal prep for the week.

Turn the oven to 375 degrees.

Brown the beef.

Slice the potatoes (very thin) and carrots.

Drain geese and add carrots and corn to the skillet and sauté. Season with salt, pepper, garlic powder and onion powder to taste.

At the bottom of a 9×13 pan place the thin sliced potatoes (Only use half of them).

Put a couple dots of butter on top of the potatoes and then sprinkle with salt and pepper to taste.

Pour the beef and vegetable mixture over top of the potatoes. Spread them evenly over the pan.

Put another layer of potatoes on top.

Put a couple dots of butter on top of the potatoes and then sprinkle with salt and pepper to taste.

Pour the heavy whipping cream over top of the casserole.

Top with cheese.

Bake at 375 degrees for 30 minutes or until potatoes are soft. Serve and enjoy!

Hint: You may need to add a little more heavy whipping cream. It helps keep the casserole moist and creamy. If you do not have heavy whipping cream in the house beef broth will work as well!

Substitutions

Now if you want to make this a whole30 meal you can absolutely do that. Primal Kitchen has amazing dairy free cheeses thats plant based. Also, for the heavy whipping cream you can use a broth or coconut milk.

  • Ground Beef – instead of ground beef, use ground turkey, chicken, or pork. Any meat will do!
  • Butter – Instead of using butter, use plant-based butter.
  • Cheddar Cheese– Instead of using cheddar cheese, use a dairy-free cheese.
  • Heavy Whipping Cream– Instead of using heavy whipping cream, try using beef broth.
  • Vegetables– If you do not have carrots, use any type of vegetable that you do have in the house.

The equipment you need to make this casserole are pretty basic items that you most likely have in your house.

Storage

My 9×13 pan has a lid that once the casserole has cooled down, I place the lid on top and store it in the refrigerator for up to 5-6 days.

Top tip

Don’t be afraid to prep a couple of these and store them in your freezer. They are so easy to make and so nice to have on hand!

Can this be meal prepped?

Absolutely, I highly suggest preparing a couple of these at one time and storing them in your freezer. I love being able to pull them out when I am in a pinch for dinner.

How do you meal prep this meal?

It is very simple. What you will do is prep everything. Assemble the casserole but do not bake the casserole. Put a layer of saran wrap and then a layer of aluminum foil and store in the freezer up to 6 months!

Ingredients
  

  • 8 Medium-sized potatoes I don't peel them, but you can if you'd like. Cut thin slices.
  • 2 TBSP Butter
  • 1 LB Ground Beef
  • 1 LB Carrots
  • 1 Can Corn
  • 1 Block Cheddar Cheese
  • 1/4 Cup Heavy Whipping Cream Or Beef Broth
  • Onion Powder to taste
  • Garlic Powder to taste
  • Salt to taste
  • Pepper to taste

Instructions
 

  • Preheat the oven to 375 Degrees.
  • Brown the ground beef.
  • Cut potatoes and carrots.
  • Drain the grease and sauté the corn and carrots with the ground beef.
  • Line the bottom of a 9×13 pan with half of the potatoes.
  • Dot the potatoes with butter and sprinkle salt, pepper, garlic and onion powder.
  • Pour the beef and vegetable mixture over top of the potatoes. Using a spatula, spread evenly over the pan.
  • Arrange another layer of potatoes over the top of the beef and vegetable mixture.
  • Dot the potatoes with butter and sprinkle cheese on top of the casserole.
  • Pour your heavy whipping cream or beef brother on top.
  • Make at 375 degrees for 30-40 minutes or until the potatoes are soft.
