Healthy Strawberry Crisp

There is something about strawberries that screams SUMMER! We had one nice sunny and 75-degree weather, and I instantly craved a strawberry crisp. To make it even better I decided to mix in some dark chocolate, so it tasted like a strawberry dipped in dark chocolate with a crunch to it. It was literally to die for.

Did I just say dark chocolate mixed in this delicious and healthy strawberry crisp? I sure as heck did! The bottom layer is a juicy, fresh, jammy strawberry with a crunchy oatmeal and chocolate top layer. If you are a strawberry lover, you are for sure going to love this treat. To make it a little extra let’s do a couple scoops of ice cream and some chocolate syrup to top it off. This one will be a must for Mother’s Day, summer picnics, summer birthday parties, or the Fourth of July parties.

Ingredients for Healthy Strawberry Crisp

Though most desserts do not benefit the body I made sure that this Healthy Strawberry Crisps would have some health benefits to it. I mean who doesn’t want to eat something wholesome that will benefit the body? So where do I purchase my groceries from? A lot of my pantry items come from Thrive Market! Filling

  • 2 Pounds Strawberries.
  • 1/4 Cup Pure Maple Syrup
  • 2 Tablespoon All Purpose Flour
  • 1 Teaspoon Vanilla Extract

Crumble

  • 1/4 Cup Butter (Melted)
  • 1/4 Cup Dark Chocolate (melted)
  • 1 Cup All Purpose Flour
  • 1/2 Cup Rolled Oats
  • 1/2 Cup Packed Brown Sugar
  • 1/4 Teaspoon Cinnamon

Topping

  • Ice Cream and More Chocolate for topping!

Filling

  • 2 Pounds Strawberries
  • 1/4 Cup Pure Maple Syrup
  • 2 Tablespoon Arrowroot Flour
  • 1 Teaspoon Vanilla Extract

Crumble

  • 1/4 Cup Oiled)
  • 1/4 Cup Dark Chocolate (melted)
  • 1 Cup Arrowroot Flour
  • 1/2 Cup Rolled Oats
  • 1/2 Cup Packed Coconut Sugar
  • 1/4 Teaspoon Cinnamon

Simple Instructions to making Healthy Strawberry Crisp

  • Preheat your oven to 350 degrees F. Grease a 10-inch oven safe skillet or a 9×9 inch pan with nonstick cooking spray.
  • Place strawberries to the prepared pan and then add in maple syrup, flour and vanilla extract. Stir until it’s well incorporated.
  • Make the topping: in a medium bowl, mix together the melted butter and peanut butter until smooth and well combined. Add in the flour, oats, brown sugar, chocolate and cinnamon mix until well combined, Sprinkle the mixture evenly over the strawberries.
  • Bake for 40-50 minutes until the filling is bubbling and the topping is nice and golden brown. Remove from the oven and allow to cool for 10 minutes before topping with the optional chocolate drizzle.
  • Once ready serve with my chocolate and ice cream!!

Secret to success on making Healthy Strawberry Crisp

  • A food processor would probably work best to blend everything smoothly. However, you can also use a blender as well. The goal is to really make the vegetables all the same consistency. This is key.
  • DO NOT TRY TO ADD MORE VEGETABLES. Toddlers/ kids are smart. They can sniff out a vegetable instantly. The 1 cup of vegetables that is added to this recipe is enough nutrients to fuel the body and not a crazy amount that your kids will notice that there are vegetables in their meatballs.
  • To make the meatballs even more tender, simmer them in a marinara sauce.
  • Though we are trying to sneak vegetables into our kids’ diets, I would be honest with them and inform them that yes, we have vegetables in the meatballs, but they will not even notice! Make it a fun activity that you and the kids can do together!

Storing & reheating tips

Store the leftovers in the refrigerator in an airtight container like this one linked here! Store in the refrigerator for up to 5 days! Reheat in the microwave.

Can I freeze this dessert?

This is a 100000% freezer friendly. Assemble the strawberry crisp according to the directions but do not bake it! Cover the dish with aluminum foil and store in the freezer for up to three months. You can bake the frozen strawberry crisp straight from the freezer at 350 degrees for an hour or until it is golden brown!

Instructions
 

  • In a 9×13 inch casserole pan dump in the uncooked pasta, marinara sauce, water, and meatballs.
  • Cover the dish tightly with foil and bake in the oven at 425 degrees for 35-40 minutes
  • Remove the cover, stir the pasta, and sprinkle the mozzarella cheese on top.
  • Place the dish back into the oven for about couple minutes or until the cheese is melted and he pasta is tender.
  • Serve & Enjoy!
