I was tired of having to go to the store and purchase crackers that are packed full of ingredients that I know will not benefit my kid’s bodies. That is when I caught a glimpse of my handy dandy sourdough starter and I thought ” How can I incorporate you into a delicious snack that my kids will inhale.”

To explain it really quickly, it is a live fermented culture of fresh flour and water. Once combined, the culture will begin to ferment and cultivate the natural yeast found in the environment.

Sourdough is WONDERFUL for the body.  The fermentation process helps to unlock all these wonderful vitamins and minerals. Not only is sourdough packed with vitamins and minerals but it also wonderful for the gut. It is packed full of prebiotic and probiotics. It can also help keep blood sugars in a healthy range.

Anyways, as I was saying. I was doing some research wondering how I could incorporate the discard of my sourdough into my kids diet so then I wasn’t wasting any food and my kids were getting a snack that was delicious and packed full of nutrients.

That is when I came across crackers. I mean think of it..what kid doesn’t like crackers? Let alone crackers that are covered in cheese!

Ingredients

I know when you hear making your own crackers you think about how much work it is to make crackers but honestly it is about a 10-minute process to make and then the rest of the time it is baking. It is VERY simple. I am positive that everything you need to make these crackers you have in your pantry right now! So why not whip them up today and make it another move towards removing processed foods out of your house.

Cheddar Cheese Sourdough Crackers Ingredients:

  • Flour
  • Sourdough
  • Cheddar Cheese
  • Butter

Instructions

Pre-heat the oven to 375 Degrees

Combine the butter and flour until the butter is broken up into bits. The best way to do this is simply by using your hands. Onces this is all mixed together, then add the discard sourdough starter and gently mix. Lastly, you will add in the cheese. Again, mix well.

Turn the ingredients into a ball.

Turn the dough out onto a piece of parchment paper and roll out the crackers on the pan sheet.

Sprinkle salt to taste and cut the sourdough crackers into squares (You can poke a hole in the center if you would like.)

Bake for 10-15 minutes (Until they are lightly brown around the edges.)

Substitutions

Don’t have a sourdough starter? No worries! They taste just as delicious with standard flour!

  • All Purpose Flour– instead of sourdough, you can use all-purpose flour or even almond flour.
  • Cheddar Cheese – Want a dairy free cracker? Try using dried herbs like Italian seasoning or simply just kosher salt.

Variations

Once you get the hang of making crackers, you’ll soon feel comfortable enough to add your own seasoning and mixes. I not only use these ingredients to make Cheez-its, but I also use them to make other crackers listed below.

  • Standard Salted Crackers – 1/2 tablespoon (or to taste) instead of cheese.
  • Italian Crackers -1-2 Tablespoons of Italian seasoning along with 1/2 tablespoon of salt instead of cheese.
  • Nacho Crackers – Add taco seasoning instead of cheese.

Storage

I like to store these in an airtight container like this one! I store them in my pantry for 1 week. If you would like to store them longer, you can put them in your freezer and store up to 6 months! If you are going to be storing them in the freezer. Here’s the freezer bag that I like to use.

How long will they stay good?

They usually stay good and crispy for up to a week. If you want them to last longer than a week store them in the freezer!

Personally, I eat them plain. However, I seen people dip them in any types of dips like pesto, hummus, cheese dip, onion dip. I have seen people have it with goat cheese and honey and even cheese and a slice of ham or turkey!

Sourdough discard is WONDERFUL for you. I have had my sourdough now for a year and it is packed full of a natural yeast and bacteria that helps break down the anti-nutrients and gluten in the flour. It makes it WAY easier for your body to digest. Even people that are gluten free can digest sourdough better!

Now, I did not start my sourdough from scratch. Luckily, I had a friend that had a well-established sourdough starter that I just took a little bit from her and grew mine. Ingredients
  

  • 2 Tablespoons Butter
  • 1 Cup All Purpose Flour
  • 3/4 Cup Discard Sourdough Starter
  • 3/4 Cup Shredded Sharp Cheddar Cheese
  • Kosher Salt Sprinkle On

Instructions
 

  • Preheat oven to 375 degrees
  • Combine the butter and flour in a medium bowl. I usually use my hands to mix them together. Combine together until it looks like sand.
  • Pour in the sourdough and mix gently.
  • Add the cheddar cheese and combine once again.
  • Use your hands to make sure the dough forms a ball.
  • Turn the dough out onto a piece of parchment paper and roll out as thin as you can using a rolling pin.
  • Cut into squares using a pizza cutter or pastry wheel.
  • Sprinkle generously with kosher salt.
  • Bake for 10-15 minutes, The crackers should be crisp with slightly browned edges. Allow to cool directly on a baking sheet.
  • Let fully cool and transfer to an airtight container and store up to 2 days.
